The Old-School Winemaking Techniques Alive and Well in California

How Williams Selyem are Crafting Timeless Wines with Traditional Techniques

Sitting in California’s Russian River Valley, Williams Selyem has perfected its winemaking over a rich 40-year history. Their commitment to traditional techniques has not only defined their signature style but also contributed to the dependable consistency of their acclaimed wines.

Many of their vineyards, aged between 20 and 50 years old, are a testament to the winery’s dedication to producing distinct and mature wines. Primarily focusing on Pinot Noir, they find themselves in an exciting phase where vine age contributes significantly to the wine’s character.

Embracing Burgundian traditions, Williams Selyem employs whole cluster fermentation and traditional foot treading, taking a step back in time to refine their craft. However, it’s the repurposed stainless steel tanks that truly set them apart. Originally dairy tanks from the 1940s and 1950s, these horizontal, open-top vessels create a unique taste experience. With their horizontal orientation enhancing skin-to-juice contact, the tanks deliver a distinctive texture that sets their wines apart.

  • While Pinot Noir remains their flagship, Williams Selyem has also ventured into Chardonnay and Zinfandel production. Regardless of the grape variety, the winery maintains a consistent philosophy – hand-picked grapes, gentle techniques, and an unwavering commitment to showcasing each vineyard’s unique personality. The winery doesn’t even use pumps to transport its wine—as Pinot Noir is a sensitive little grape—with the winery relying entirely on the age-old winemaking skills of gravity.

This care and dedication results in wines that authentically represent the regions that the grapes originate from, capturing their essence in every bottle. From repurposed dairy tanks to traditional foot treading, Williams Selyem’s timeless approach continues to define the distinct identity of their remarkable wines.
